Is your Android Auto app up to date on your phone? Which software version do you have on your MG. Mine is R21 and it works ok.

Does it work ok with Google Maps as that is what I use and I can adjust the volume. You say you’re sure it’s not an issue with Waze but Android Auto and Waze get updated regularly so perhaps a bug has been introduced.

Change the volume while the android auto voice is speaking and it should remember the setting.

I’ve had problems after amending the battery charge schedule from the MG app. This seems to cause the schedule screen in the car to freeze up and the car doesn’t charge. The fix is to disable and re-enable the schedule in the car and amend the schedule times.
