I'm aware the horn will beep when attempting to lock if a door is open, but tonight it honked, made a locking noise and folded the wing mirrors (PFL LR Exclusive)

On checking a rear passenger door wasn't fully shut.
Does this mean I can't use the folded mirrors as a sign the car is actually fully locked?

I had unlocked it to charge overnight, opened the flap, (swore because I'd accidently broke the retaining strap on the granny lead cover  ) plugged in the unenergised granny, locked the car with the fob button. Honk.

I wish it just flashed the indicators more than normal (my old Renault used to do that and unlock ALL the doors) instead of broadcasting my incompetence to the neighbours.

As you described it means that the drivers door was shut but something else, rear passenger door in your case wasn't shut properly, so you can't totally rely on the folded mirrors as a visual guide to complete locking.

From the manual

Mislock
If the driver's door is not fully closed when the smart keylock button is pressed, or the vehicle power system has not been switched OFF, the vehicle horn will sound once, indicating a mislock. In this case, none of the doors will lock, the alarm system will not be armed and the direction indicator lights will not flash. If the driver's door is closed, the passenger door, bonnet and tailgate are not fully closed, the horn sounds once to indicate mislock when the car undergoes locking operation. However, the ‘partial arming’ attributes of the security system will enable as much of the system to be armed as possible (all fully closed doors, bonnet or tailgate apertures will be protected, but an open door will not!). The alarm indicator will flash. As soon as the open aperture is closed, the system will automatically revert to an armed state
