12V runs similar things to an ICE.
Heating and AC from HV battery.

However the HV battery charges the 12V battery, so anything used will decrease mileage

Just tell her to use it as a normal car and not to burden herself, enjoy the car. Charge when needed and check instruction manual what to do for battery maintenance (occasional slow charging)

The car doesn't provide a running charge status for the 12V ancillary battery anyway, so it isn't really possible to confuse the two whilst you are driving it.

The battery percentage it shows you is the one that matters - the main gigantic traction battery sat beneath you.
