why has my 100% charge dropped from 200 miles to now 140 miles after a long journey of 180 miles?

Toggle to the 'long range' trip and then hold the OK button

Which will only fool you/the car into thinking there's more range than there actually is ... a placebo effect. Once you've driven several miles and the Long Range / Accumulated Total builds up an efficiency value then the range will readjust based on it.
