I was honest with the chap in VW and asked him why it’s so poor vs even the bottom level Golf. “It’s a totally different car” was the response.

thats a really shocking justification... the reply I got was from a salesman that is no longer working for my local VW dealer and that was "to get people to go for the ID.4 instead". I am not sure how serious he was in that comment as I didn't test drive the ID.4 because of it's price... but safe to say, for a 40 grand car, the ID.3 does not seem good value for money in my opinion.
